Don’t be afraid of the name, this pasta is delicious! Halloween is the season for one of my favourite ingredients, the pumpkin (also known as butternut squash), but I am not a big fan of the pumpkin’s dessert recipes. So I tried to find an easy way to cook it as a meal and invented this Halloween recipe with pasta and pumpkin sauce.
This pasta recipe is perfect for Halloween because it can be prepared very easily and with very few ingredients. Originally it’s a pasta with pumpkin (or butternut squash), bacon and curry sauce that I turned into a Halloween recipe just by playing with colourful products: black pasta, best if it is spaghetti, orange pumpkin sauce and a few parsley leaves for the green touch… the Halloween recipe is ready!
**Trick** Don’t mash the pumpkin too much in the sauce, leave a few pieces and the pasta will look like Halloween brain pasta !!!

Ingredients
- 14oz. (400g) of pumpkin or squash
- A little bit of butter for the pan
- 1 onion
- 3 garlic cloves
- 7 oz. (200g) of bacon
- Salt, pepper, grounded cilantro seeds ...
- 1 tbs of curry pasta
- 1/2 tsp of hot paprika (optional)
- Grounded nutmeg
- Oregano
- 0,4 US cup (100ml) of white wine
- 14 oz. (400gr) of black spaghetti
- 0,4 US cup (100ml) of liquid cream
- Parsley
- Parmesan cheese at your taste
Instructions
- Start by preparing the pumpkin: the best way is to cut slices of 1 inches, and remove the skin of each piece with a knife. Then cut the slices in small cubes.
- Heat a little bit of butter in a big pan over medium heat, chop the onion and 2 garlic cloves in the meantime and throw them into the pan once the butter is hot. Cook them until soft, 5 minutes more or less.
- Add the bacon in the pan and cook until it is fried.
- Incorporate the pumpkin's cubes, the salt, pepper, grounded cilantro, the curry paste, the hot paprika and the nutmeg and mix well. Cook for a couple of minutes, until you smell the spices.
- Pour the white wine in the pan, cover and simmer until the pumpkin is soft and can be mashed with a fork, about 20 minutes.
- In the meantime, start cooking the pasta as indicated on the pack.
- Drain the water of the pasta when they are ready and place them into a large platter.
- Once the pumpkin sauce is ready, roughly mash the pieces with a fork, but don't forget to leave a few pieces so that the pasta will look like Halloween brain pasta!
- Incorporate the cream and the parmesan cheese.
- Pour the pumpkin cream on the pasta, and top it with a little bit of chopped parsley, trying to keep all the colours separated for the presentation.
- Then mix it in front of the guest so that the black and orange are mixing together into a brain pasta!!!
