Originally used to finish the risotto left-overs, this risotto croquettes recipe can be turned into an elegant Christmas meal appetizer with smoked salmon, “canapés” style.
The risotto is usually not very good if reheated, so if you have any letf-overs it is better to turn it into risotto croquettes: a little bit of breadcrumbs and olive oil, and that’s it! You can do it with any type of risotto, but I based my Christmas recipe on the Mushroom and smoked salmon risotto recipe because it is very tasty and the saffron gives it a nice yellow colour. The other risotto I would recommend for this Christmas appetizer recipe is the wild mushrooms risotto: everybody likes it, and the taste goes well with the salmon.
It is better if you can prepare the risotto in advance and make the croquettes at the last minute before the dinner starts.

- Shape medium size balls with the risotto.
- Pass them through the breadcrumbs.
